How to Properly Cook a Bison Steak

Have you tried bison before? If you haven’t, you’re missing out! If you have, then you know that bison is the most delectable meat you can eat. That is, of course, if it’s cooked right. In this blog, Memphis Ranch is going to give you some quick pointers on how to cook different cuts of bison steak.

Bison Ribeye

We like to grill our ribeyes, so the first thing you want to do is get your grill up to around 450-500 degrees. Then, put a decent amount of salt, pepper, and garlic on the ribeyes and let the salt soak up a little moisture, while the flavor sets into the meat. Let them sit and absorb the flavor for about 15 minutes, and then add whatever additional seasoning you want. We recommend letting each side cook for about three minutes—that’s six minutes total for a juicy medium-rare cook. This will allow you to taste the most amount of flavor.

Bison Filet Mignon

Along with our ribeye, season with salt, pepper, garlic, and any other seasoning you may want. For this one, we’re using a cast iron and cooking our filets on medium-high heat. Sear each side (top and bottom) for one minute. Then, add ¼ cup of dry red wine and ¼ cup of balsamic vinegar. Finally, cover and cook each side on a low temp for four minutes.

Bison Brisket 

We like to cook our bison briskets low and slow and with some barbeque sauce. Layout the buffalo brisket, then add water so the water covers the pan about 1/4 inch and touches the brisket but does not flood over them. Pour in 20 oz of your favorite BBQ sauce, and then cover with foil and bake on 225 for 8 hours.

Bison Sirloin 

Bison sirloins already have a lot of flavor in them, so you don’t need much seasoning. Salt and pepper will do for this cut. Depending on how rare or well you want it cooked, throw it on the grill for at least three minutes on each side on a hot grill (around 450 degrees).
